Virgin coconut oil (VCO, “virgin / extra virgin”)
How it’s obtained
Raw material: fresh coconut meat, not dried copra. Mechanical or natural extraction, unrefined:
Cold pressing of the coconut meat or coconut milk. “Wet milling” processes: obtain coconut milk → centrifugation to separate the oil.
No chemical refining, no bleaching or deodorisation, so it keeps its typical aroma and nutrients.
Characteristics
Solid or semi-solid at room temperature (~24–25 °C).
Strong coconut aroma and flavour.
Smoke point approx. 170–180 °C (a bit lower than refined).
Main uses
Food
Gentle everyday cooking (light sautéing, baking, partial butter replacement).
“Natural”, “organic”, “unrefined” products, smoothies, bars, natural MCT source.
Cosmetics / personal care
“Natural/eco” body and hair oils.
Lip balms, ointments, artisan soaps (adds hardness and foam).
Nutraceutical / functional

2. Refined coconut oil (RBD – Refined, Bleached, Deodorized)
How it’s obtained
Raw material: copra (dried coconut meat).
First a crude oil is extracted, then it is refined, bleached and deodorised to remove impurities, colour and odour.
Characteristics
Very pale colour and neutral flavour, practically no coconut smell.
Higher smoke point (≈ 200–230 °C), suitable for frying and industrial uses.
Main uses
Food
Frying, snacks, ready meals, vegetable margarines and shortenings.
Industrial bakery, pastries, ice creams, chocolate coatings (thanks to its solid fat profile).
Cosmetics / hygiene
Base oil in soaps, shampoos, creams, due to its stable and economical fat profile.
Other industrial uses
Manufacture of surfactants, detergents, “bio” lubricants, candles, etc.
Fractionated coconut oil / MCT (Caprylic/Capric Triglycerides)
How it’s obtained
Starts from coconut oil (usually refined) and undergoes fractionation: liquid fractions rich in C8–C10 (MCT) are separated, and higher-melting fractions are removed.
Characteristics
Liquid at room temperature, totally transparent, odourless and tasteless. High oxidative stability. Very light skin feel, non-greasy.

a) “Cold-pressed” coconut oil
Subtype of virgin oil; refers specifically to using low temperatures in mechanical extraction.
Uses: same as VCO, but positioned as more “premium”.
b) Physically deodorised coconut oil (steam refined)
Refined with steam, without chemical solvents.
Widely used in organic products when a neutral flavour is needed (chocolates, spreads, etc.).
c) Hydrogenated coconut oil / shortenings
Partial or full hydrogenation to increase melting point → solid fats (shortenings).
Uses: pastry products, fat fillings, industrial margarines; increasingly less popular due to trans fat concerns.
